1. Before putting them in the fridge to cool, roll the cookie dough first
It’s more difficult to roll the cookie dough after it’s hit the fridge and it tends to crack and so the fresh dough because of it’s soft and pliable texture, it’s easier to put it under the rolling pin first.
2. Why don’t you try powdered sugar instead of flour for rolling the delicious sweets
If you tend to bake desert a lot you know that most of the times, recipes require you to dust the work surface with flour, but you can try powdered sugar for a change.
Why? Because the risks of getting stuck on the counter are smaller and you won’t have to add some more flour to the cookies.
3. In case you are making chocolate chip cookies, let the dough rest in the fridge for a whole day
It’s quite unusual right? But you see, the flavor is more intense after baking them and the texture will be softer. Make the dough and let it cool for a day or two.
4. Use an empty tube to make perfect round cookies or a small cup
It will provide you with the ultimate round cookies that would look so surreal you wouldn’t dare to eat them in the first place.
5. In between batches you can cool the baking sheets
I know it sounds a little bit off, but we have a perfectly good explanation for that. When you add fresh dough on the hot sheet the butter will melt before going into the oven and the cookies will spread all over and they will chaotic.
Before the second batch why don’t you put the sheets under cold water for a minute or two and then place the mixture on.
