1. Cheesy eggs

This one is the perfect meal for busy days, especially for breakfast, when you want something quick and healthy and that will keep you full and satisfied until lunch time.

In order to prepare an omelet in the microwave, you will need:

  • 2 eggs;
  • some shredded cheese;
  • cooking spray or a teaspoon of olive oil;
  • salt and pepper;
  • parsley (this one is optional, but it brings the flavors together);
  • a mug or a microwave safe bowl.

Method

  • beat the eggs together with the salt and pepper. Add the parsley and the cheese after;
  • spray the mug or the bowl with cooking spray or with olive oil, the pour in the mixture. If you want it to be more filling, you can add in some cooked vegetables, such as mushrooms or bell pepper;
  • put the mug or the bowl in the microwave and cook it on high for 90 seconds. Keep in mind that the cooking time can vary due to the microwave.

2. Peanut butter mug muffin 

This is perfect for breakfast, post dinner dessert or simply as a snack. It’s sweet, warm and peanut buttery.

Ingredients

  • 2 Tbsp. of peanut butter;
  • 3 Tbsp. of milk (you can choose regular milk, almond milk, oat milk, whatever works best for you);
  • 1 egg;
  • 3 Tbsp. of flour (you can use almond flour or oat flour as well);
  • 1 tsp of baking powder;
  • 1 tsp. of sugar, honey or stevia;
  • 6 oz. of Greek yogurt (optional).

Directions

  • spray a mug with cooking spray and add all the ingredients, except the yogurt;
  • mix, mix, mix!
  • microwave for approximately 1 minute and 30 seconds (the cooking time can vary, depending on your microwave);
  • top your mug muffin with Greek yogurt and enjoy!
