Asparagus
Asparagus is one of the healthiest veggies out there, as it is low in calories and packed with essential vitamins and minerals. It is also an excellent source of antioxidants. As you probably already know, antioxidants are compounds that help protect your cells from the negative effects of free radicals, as well as oxidative stress.
However, did you know that they are healthier when cooked? According to a 2009 study done by Simone Fanasca and colleagues, on antioxidants properties of raw and cooked asparagus, published in the International Journal of Molecular Sciences, when you cook asparagus, you actually boost its antioxidant activity by 16 to 25%.
Another 2009 study done by Eleftherios Papoulias and colleagues, on the asparagus and antioxidants, published in the International Journal of Molecular Sciences, found that cooked asparagus has higher levels of phenolic acid, which helps reduce the risk of cancer.
