So, according to a 2000 study conducted by A M Jiménez-Monreal and colleagues, on the influence of cooking methods on antioxidant activity of vegetables, published in the Journal of Agricultural and Food Chemistry, beta carotene levels in carrots increase when the vegetable is cooked rather than raw.
