Green Beans
Did you know that green beans are healthier when cooked? According to a 2007 study done by Talwinder S. Kahlon and colleagues, on the effects of steam cooking, published in Nutrition Research, if you eat steamed green beans you will be more likely to lower your cholesterol levels, unlike raw ones.
A 2009 study conducted by A M Jiménez-Monreal and colleagues, on the influence of cooking methods on antioxidant activity of vegetables, published in the Journal of Food Science, green beans contain higher levels of antioxidants when they are baked, microwaved, griddled, or even fried rather than boiled.
