Kale

Experts say that kale is one of the healthiest and most nutritious greens out there. It is loaded with vitamin A, vitamin K, vitamin C, vitamin B6, Calcium, Potassium, vitamin B1, vitamin B2, and vitamin B3. It is also high in antioxidants, including quercetin and kaempferol, lowering blood pressure, reducing your risk of cancer and other cardiovascular diseases.

According to some recent studies, raw kale contains isothiocyanates, but cooked kale kills the enzymes that can trigger a potentially harmful effect. So, you should eat steamed kale more – this cooking method won’t reduce the antioxidant activities.
